Hey friends, here’s a gorgeous Autumn Fruit Crumble for you to try at home.
I ADORE crumbles, but this combo is a favourite of mine at this time of year. Seasonal apples & wild blackberries stewed on the stove top until oozy & jammy & delish.
There’s still heaps of blackberries in the hedgerows all over the country so get picking & make this. It’s EPIC
Slice 6 large or 8 small pink lady apples & stew with 250ml water until softened. Tip in 400g of wild blackberries (organic & free!) & cook for 5 mins until the blackberries break down a bit & bleed into the apples turning them pink.
Combine 120g porridge oats, 50g flour, 2 tbsp soft brown sugar & 75g butter to make an oat rubble topping, keeping it lumpy, bumpy & rustic!
Tip the stewed fruit into a big ovenproof dish, lob the rubble loosely all over the top & bake at 180 for 30 / 40 mins or until you just cant resist anymore!. You want an oozy, bubbling bottom & a golden crunchy top. Scoop generous spoonfuls into whatever vessels your using & lash on the cream, ice-cream, custard or whatever combo you fancy.
Savour every glorious mouthful & thank mother nature for her bounty!
You might be lucky enough to have apple trees to grab lovely seasonal Irish apples from but if not, pink lady apples are half price in Aldi at the mo, the blackberries on the hedgerows are wild & organic & free! As Brittany would say its a sign!
