Gosh the occasions are coming hard & heavy so far this year! Pancake Tuesday & Valentines Day on the same week! These recipes should help ya out!
Recipe 1 – Pancake Tuesday Nutri-Bullet Pancakes! You NEED these in your life!

Throw 180ml of milk, 100g water, 140g flour, 1 tbsp melted butter & 3 eggs into your nutribullet. Blitz for 30 seconds until smooth, then tip into a jug. Smear some melted butter in a hot pan & pour enough batter to just cover the bottom of the pan.
Cook for a couple of mins on both sides then devour with lemon & sugar…. OR strawberries & ice-cream…. OR sliced banana & chocolate sauce… OR literally anything else you fancy. My dudes are begging for crushed oreos on theirs this year as apparently we’re giving up EVERYTHING for lent so today has to be OTT! Me….. I prefer sugar & lemon hands down…. & a dollop of berry compote if its in it!
& yes of course just whip them up by hand if you prefer a mini work-out either! 😁
Recipe 2 – Chocolate & Raspberry Mousse Pots
A classic mousse to have up your sleeve – make it the day before to make wooing your other half a doddle & serve in your prettiest glasses or expresso cups!
Serves 4 (so you’ll have some for the next day too!)
100g dark chocolate (minimum 70% cocoa solids)
2 tbsp water
2 tbsp pouring cream
3 eggs, separated
2 punnets of fresh raspberries
To serve – fresh mint leaves & a dusting of icing sugar if you fancy!
Break the chocolate into a heatproof glass bowl & place over a saucepan of gently steaming (but not boiling) water, making sure the base of the bowl does not touch the water. Leave until just melted giving it a gentle stir every now & then. Take it off the heat & stir through the couple of tablespoons of water, followed by the pouring cream. Stir through the egg yolks, one at a time. Pop to one side while you whisk the egg whites.
In a separate, spotlessly clean bowl (or a tall jug is even better) whisk up the egg whites until they form stiff peaks. Take a quarter or so of the whisked egg whites & fold it into the chocolate mixture to loosen it. Then fold through the remaining egg whites.
Spoon the molten chocolate mixture into individual glasses or cups or ramekins & pop them in the fridge for about an hour or until set. Of course, you can lick the bowl!
Before serving top with the fresh raspberries, a dusting of icing sugar & a sprig of fresh mint. Delicious post dinner dessert even better followed with a strong shot of expresso!
PS A tablespoon of rum or Cointreau added to the mix will lift it up a gear for a dinner party too! There are no rules so be as creative as you like!
