Now for that Toffee Popcorn recipe – popcorn slathered, like I mean slathered in homemade toffee sauce & baked until crunchy – need I say more!
Ingredients:
- 100g unsalted butter
- 100g soft dark brown sugar
- 100g golden syrup
- 50g treacle
- 100ml cream
- Couple of big pinches of sea salt
- 1 packet of microwave popcorn
Preheat the oven to 190. Tip the butter, sugar, syrup & treacle into a saucepan & bring to the boil. Simmer for about 5/ 7 mins, then tip in the cream & bring up to a rolling simmer.
Pop the popcorn in the microwave as per the pack instructions. Dump it into a big bowl & pour over about half the toffee sauce. Coat well using a big spoon.
Line a baking sheet with parchment & tip out the popcorn in one single wide layer. Sprinkle on the sea salt.
Bake for 10 / 15 mins until ridiculously crunchy! Allow to cool before scoffing to your hearts content!
Make it next level – This is delish served as is BUT make it next level by melting some dark or milk chocolate & swirl it through the popcorn once baked to create little Chocolate Toffee Popcorn Clusters either…
Leave the oven off: baking it makes it super crunchy, you can skip it though & just leave the toffee popcorn set on the counter for a couple of hours either.
Leftover Toffee Sauce: If you do have leftover toffee sauce (I know, hilarious right!) it will keep in an airtight container in the fridge for several weeks (I know I’m being very optimistic… & if your house is anything like my house, it won’t make it through the night either!)
