
...here's one of my favourite recipes to cook for Valentines Day dinner for himself! Try it! Steak is a perfect choice - it's quick to cook, delicious & always feels like a treat!
My Steak with Chimichurri recipe is a total winner & a fresh way to serve your steak especially for a special occasion like V-Day! – perfectly cooked steak served with a herby fresh Argentinian uncooked sauce that is SERIOUSLY SAVAGE with grilled meat!
2 x 1-inch-thick ribeye steaks
2 tbsp olive oil
1 tbsp balsamic vinegar
1 clove of garlic – peeled
For the Chimichurri:
1 small red onion – sliced
1 handful of flat-leaf parsley
1 handful of fresh coriander
2 cloves of garlic – peeled
1/2 red chillies – thinly sliced
2 tbsp red wine vinegar
6 tbsp extra virgin olive oil

Marinade the steaks in 1 tbsp olive oil, balsamic, grated garlic & black pepper for how ever long you have – even 20 mins is good…
When ready to cook, season your steaks with sea salt.
Heat a heavy pan with the remaining oil until pretty much smoking.
Cook for 2 mins on each side for medium rare, 2.5 mins on each side for medium or 3 mins on each side for well. The only time you should touch the steak is when you turn it!!
While the steaks are cooking prep the chimichurri. Roughly chop the parsley & coriander & add to a large
bowl along with all the other ingredients. Season generously & combine well before adding enough extra virgin olive oil to reach a thickish pouring consistency.
You are going to serve this drizzled all over the cooked steaks but if you fancy basting the steaks with a
little of the chimichurri on each side during cooking, go for it!
Allow the steaks to rest for a couple of mins before slicing into thin strips. Drizzle the Chimichurri all over….
I love to serve this on top of a simple rocket salad with griddled asparagus on the side & a hunk of crusty bread for mopping.
