Hello lovelies!
Here an Easy Easter Dessert recipe using lots of cheats hacks to make light work of it! Berry & Lemon Curd Eton Mess.
A simple, speedy light dessert to make (well, just throw together really😁!) for Easter Sunday entertaining.
Whip up a big carton of cream (you can use all cream, but a combo of half cream, half sour cream is my fav! 😉) Break up a box of shop-bought meringues roughly & fold lightly through the cream, adding in sliced strawberries, blueberries & a couple of generous spoons of lemon curd if you fancy or have it. Top with more berries, another swirl of lemon curd & some mint for a splash of greenery. Serve in a big glass bowl / serving dish & let everyone pile in!
Light bright & sings of Spring!
Lemon Curd is my absolute fav! Yes, you can make your own, but if you buy yourself a jar of good quality shop curd that’ll do the trick nicely.
Extras nuggets for ya!
*Macerate the🍓in a spoon of sugar or icing sugar for 5 mins if you want first. This pulls out the natural juice & creates the most divine & simple🍓syrup.
*If you want to make homemade meringue just whip up 2 egg whites until stiff, add in 150g caster sugar in 2 batches & combine well. Test a bit between your fingers to make sure it’s ready – if its grainy it needs a little longer, if its smooth you’re good to go! Add a small splash of white wine vinegar & combine.
Spoon heaped tbsps of the mixture onto parchment paper & using the back of a spoon make a scooped-out indent in each meringue.
Bake for 30 / 35 mins until crisp on the outside but soft & chewy in the middle – you might need to test one!! Turn off the oven & leave for a couple of hours or (even overnight) to cool completely. Use for Eton Mess OR load up to serve as individual meringues.
*You can swap out & use other fruits, I love a stone fruit combo, think peaches, nectarines & cherries.
